The wine is then aged for 18 months in French oak barrels, followed by a secondary ageing of 24 months in the bottle.
Vinification
HARVEST: Manual harvest. VINIFICATION: Careful grape selection is performed at the vineyard, with only the best grapes transported to the winery. A flawless destemming process is carried out using a vibrating destemmer, ensuring the berries are handled with the same care as in an artisanal process. The must is pumped over twice daily. Alcoholic fermentation takes place in a small stainless steel tank, starting at 10 °C for the first four days and reaching a maximum temperature of 30 °C. The wine is then aged for 18 months in French oak barrels, followed by a secondary ageing of 24 months in the bottle. Filtration is kept very light to preserve the wine's full richness and finesse.
