Aged in French oak barrels for 12 months, followed by a second aging in bottle for 18 months.
Vinification
HARVEST: Handpicked VINIFICATION: Carefully selected grapes from the six highest vines of a sloping vineyard. The vines and soil are very dry, and the bunches are particularly small. The de-stemming process is expertly controlled using a vibrating de-stemmer, preserving the berries as in traditional craftsmanship. Pumping over is done twice a day. The alcoholic fermentation takes place in a small stainless steel tank, initially at 10 °C for the first four days, then at a maximum temperature of 25 °C. Malolactic fermentation occurs at 30 °C, also in stainless steel tanks.
