    The Parceto is aged for 2 years in small capacity barrels and French oak barrels; followed by 6 months in the bottle.

  • Vinification

    After a soft destemming-crushing of the grapes, a slow maceration at a controlled temperature is carried out in oak vats truncated cones that lasts for 16-18 days. They are carried out daily numerous pumping overs which decrease as fermentation ends. There Malolactic fermentation occurs spontaneously within the month of December.
